Meal Plan – Week of July 10

Brownies

Every Monday, I’ll be posting our meal plan for the week, complete with snacks and any deals I found. I usually do my grocery shopping on Saturday (market and Earth Fare) and Sunday (Meijer and Aldi). Depending on the budget for the week and what we have in our pantry, sometimes I will meal plan before shopping and sometimes I will meal plan after.

* A note on lunches – I work outside of the home during the week. I usually have either leftovers or something simple like raw cheese with seed crackers or cottage cheese and popcorn, etc. just a bunch of munchies trying to get enough protein and fat to get me through the day. If I know I don’t have much for lunch I try to eat a larger breakfast and take a high fiber fruit with me to help me get through. DH is at home during the day with V. She’s young enough still that she needs to eat several times between meals. She usually eats at meals and then has smaller snacks between each – fruit, crackers, hummus, etc. We don’t really plan lunches because of this.

Every Friday, I will breakdown our meal plan budget, mostly to try to keep us accountable since groceries/food is really the only variable cost we have and we (me) really struggle to stick with our budget for the week.

Snacks for the week

homemade (Sunday) eggless banana bread, fresh or frozen fruit (following dirty dozen/clean 15), trail mix, homemade banana “ice cream” (recipe to come), popcorn (recipe to come), organic tri-color carrot sticks, raw sharp cheddar cheese, sprouted crackers, hummus

Sunday, July 10

Breakfast – A little bit of this and that

Lunch – Tuna mac and cheese, mangoes

Dinner – No-bun hamburgers with lettuce, radishes and avocado, berries

Monday, July 11

Breakfast – Ezekiel bread toast with almond butter and bananas or cream cheese and strawberries

Lunch – LO hamburgers, carrots, side salad

Dinner – Mexican crockpot chicken with avocado and rice

Tuesday, July 12

Breakfast – Coconut oatmeal with frozen berries

Lunch – Leftovers, work potluck for me

Dinner – Spicy sweet salmon with avocado and sweet potatoes

Wednesday, July 13

Breakfast – Ezekiel toast with cream cheese and strawberries or almond butter and bananas

Lunch – Leftovers, V to grandma’s

Dinner – Veggie Fried Rice

Thursday, July 14

Breakfast – Coconut oil oatmeal with berries

Lunch – Leftovers

Dinner – Balsamic garlic crockpot chicken with quinoa

Friday, July 15

Breakfast – Toast or oatmeal with fruit and a fat

Lunch – Leftovers

Dinner – Salmon with whatever veg we still have left

Saturday, July 16

Breakfast/Lunch/Dinner – use up everything in the house
